CSA Week 22: A Day Late Edition

Dinner #1

We had carnival squash! Carnival squash is the best. So I decided to make stuffed squash. I ground together some stale bread ends, ricotta cheese, an apple, a couple of eggs, herbs from the garden, chickpeas, and roasted garlic, and used all this for stuffing. When they came out of the oven, I topped them with marinara sauce.

Stuffed squash, broccoli, saladTook the dill and made a yogurt sauce with it. Steamed the broccoli and served this dill yogurt sauce on it.

Made a couple of dinner salads with an apple and some of the lettuce. Dressed those with the dill sauce as well.

Everything got a heavy dose of salt, pepper, and Parmesan cheese.

Vegetarian.

Dinner #2

Made cornbread.

Took the collard greens and the carrots and cooked them with green onions, garlic, thyme from my garden, salt, pepper, paprika, and pinto beans. Used some veggie broth to help it along.

Cornbread, beans & greensMade a salad with the lettuce and a tomato from the farmer’s market. There was a little tomato left over, so I tossed that in to cook with the beans and greens mix.

Dessert was apple crisp, using what was left of this week’s apples.

Vegetarian.

Due to an upcoming vacation where I will be unreachable and some tight deadlines, I am working from home this weekend (thankfully, I can get overtime since I am at a use or lose point for my time off so really need that vacation to count as vacation time and have an aversity to working for no pay). 
It has been suprisingly easy to putter in the kitchen while waiting for updates to my data base and for data to complete uploading with these particular tasks.  As a result, I am prepping for the week nights prior to our departure which will help make them a little less stressful, mostly pre-browning or grilling meat and slicing or chopping vegetables.

Stuffed squash sounds great! FYI, there is a cheesemaker from upstate NY who produces wonderful goat-cheese ricotta. It has so much more flavor than cow ricotta:

I’m wondering if the CSA fruit selection is limited to apples, or if pears or even Asian pears are also possibilities. Even though there are a ton of apple varieties, being able to switch fruits entirely is good.

I wonder if there is a way for vegans to infuse smoke flavor into their pots of greens, considering that hambones are taboo. Also, greens go very well with shallots, if those are a possibility.

Hector, have you tried Colgin’s Liquid Smoke?  There are other brands, but that’s the best I’ve tried.  It also comes in four different varieties.

It’s a different effect, but for greens without hambone or bacon grease, I like to basically overdo it with the olive oil and garlic. It’s not smoky, but it’s really good.

I had to google the carnival squash, but now that I know what they are, I completely agree. I got those at the farmer’s market two weekends ago, and they were so good I just ate them plain.

Emmett, it was a real suprise since work I had done at home with previous assignments/projects had not typically allowed enough down time to get anything useful done.
